50's Comfort Foods

So, in my quest to spend as little money as possible on food, I have been exploring some of the 50's comfort foods.  I have made tuna casserole and NAILED the perfect recipe, which I am committing to my personal cookbook in process on TasteBook.com.  I also found the best EVER macaroni and cheese recipe from the Food Network, which I promptly modified, and that too will also be in the new cookbook.  The original recipe called for a touch of hot sauce; I presume they meant a standard Tabasco or table hot sauce; I used Thai HOT chili sauce, and the flavor was really interesting - the boy loved it, he said it added a new dimension to mac and cheese, and made it interesting.  I still think he will eat anything I make and like it, but I am going to choose to take him compliments to heart, just the same. : )  I also made sloppy joes from scratch, after refusing to "make" them using the crap out of the can.  The boy wanted me to add msg and nitrates to make it more like the original, but I refused. Sometimes you just have to draw the line.  I also made spaghetti and meatballs, and used ground pork mixed with two eggs and a cup of panko for the meatballs; they turned out really good. I fried them a few minutes in olive oil with the onion for the sauce, and when they were good and browned on most sides, I added the spaghetti sauce (Hey, Will, I used a JAR of spaghetti sauce!!! :-P ) and let it all simmer for 45 minutes, and served it over spaghetti pasta.  I think next time I would add more sauce, the ratio of meatballs to sauce wasn't quite right.  Or maybe I'll freeze half the batch of meatballs.... hmmmm....

Next up on the list is salisbury steak.  And something with chicken.  I can't decide. I don't really like chicken.  I mean, I have nothing against chickens themselves, I just don't really enjoy eating chicken.  Ooooh, I have a recipe floating around for chicken sauteed in honey and curry, served over rice... yum...

On a completely non-food note,  things are going very well with the boy. I feel so fortunate to have met him, he is a really amazing person.  We enjoy doing a lot of the same things, and we can talk and talk for hours about anything and everything. Did I mention that he will eat just about anything I put in front of him. Does it get any better than that? : )
